Place in blender, blend at high speed two minutes:
1 3/4 cup buttermilk
2 eggs
2 tbsp olive oil
1 tsp vanilla
2 Cups rolled oats-uncooked
Note: regular milk works as well
Mix in briefly:
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
Bake on griddle or in hot waffle iron for waffles
