For a few days this week, it'll be just my daughter and me, so we'll probably eat lightly. For whatever reason, I feel like I'm having my own personal mini vacation when my honey is away, thus I think I can skimp on having regular meals and cooking for myself. However, since I am trying to take better care of myself, due to diabetes, I decided that I needed to make a menu just like always so that I'll have my food planned and ready for me . . . instead of scrounging in the pantry for whatever high-carb junk happens to be in there.

Hmm, looks like a really good week of yummy food. I sure need to make a menu it would make hubby happy, maybe I will although I say that everytime I see your menus.

Tori, I can't imagine not having a menu! LOL You'll have to post yours when you make one. My kids and hubby all depend on mine for when they come around wanting to know what's for dinner. Keeps me from going insane having to come up with something when they ask! ;)
